The history of Macelleria Zivieri began in 1987, in an area outside the spotlight: the Bolognese Apennines.
Perhaps it is precisely this location that makes it best suited to pursue a project that focuses on quality and ethics, two concepts that in animal husbandry require spaces, rhythms and resources that are outside the average consumer logic.
The business begins to take shape, so the first new ideas also begin to emerge. In particular, the enhancement of local breeds such as Mora Romagnola and Fassona Piemontese.
This was a particularly courageous choice, especially considering that it was made at a time in history when care for raw materials and product research were decidedly less than they are today. Confirming the direction taken, in 2013 the Butcher Shop began the “Game Project.”
Over the years, the Butcher Shop expands, acquires laboratories more and more suitable for processing, and opens sales and refreshment outlets in nearby Bologna, garnering success and acclaim from enthusiasts and industry guides.
In 2021 there is a definitive step forward, a return that makes clear the essence of the business, its true vocation.
In fact, Fattoria Zivieri is born, a space where catering, hospitality and educational activities coexist. Here you will find 80 hectares housing more than 350 animals raised in the wild and semi-wild state show what has been the work of the Zivieri Family for almost 40 years now.
