Girgentana goats are raised using techniques that respect their well-being and fed organic plant products exclusively on the farm's pasture, or 60 hectares of certified organic land also used for cultivation. The grazing animal never feeds on the same herbs, which gives the resulting cheeses a natural and characteristic seasonality in flavor.
