Drying process: the bunches arrive positioned in small boxes and are carried to a locale where they are aerated for eight weeks until they obtain the necessary levels of sugar.
Fermentation and maturation: in barriques for 6-8 months.
Aging: 12 months in bottle
Organoleptic examination: golden yellow, crystal color. On the nose, there are evident sensations of dried apricot and of delicate white flowers. In the mouth, the silkiness and softness typical of the vines are enriched by considerable broad acid and mineral notes. The finish is long and recalls citrus fruit peel, cinnamon and the skins of white peaches.
Food pairings: a perfect accompaniment to pastries, especially sweet pastries with creme. Excellent with long-aging cheeses as well as blue cheeses.
The vine
Ancient vine of the Roman era, Fiano was named Latino to distinguish the vine from the origins of Greco. It is a rigorous vine that prospers well in soils of volcanic origin as in these clay deposits. Its entymology refers to Apanius and the apiane grapes mentioned by Columella and Pliny. Its name was traced back to the bees who would have been greedy to acquire the grapes’ sugar. Another hypothesis about this name arrives from a variety of apple (Appiana from Appio) or from an ancient synonym for the Peloponnese.
