RECIOTO 1990 - BERTANI
Bertani produces Recioto, a sweet red wine, with the Corvina and Rondinella grapes from the hills of the Valpantena, the same varieties used for Amarone. It is made from the smallest bunches with the best exposure to the sun, which are dried for about three months on the traditional “aréle”, or cane mats. The typical cherry bouquet is enhanced by the fact that the wine is matured in cherry-wood casks until it becomes a concentrate of wild marasca and visciola cherrries. The result is dense and velvety, but never cloying.
Grapes varieties:
Rondinella and Corvina Veronese.
The vines are cultivated using the “spalliera” method. The pruning is making using “Guyot “ method with a density of 5.000 bases/ha.
Area of production:
Hills of Valpantena valley, northern of Verona, in Quinto, Grezzana and Santa Maria in Stelle area. In the east side the soil is of marn-calcareous composition and in the west side argillaceous calcareous, rich in iron.
Vinification:
The manual harvest takes place at the end of September. A selection of the best ripe and healthy bunches are transported to the loft, extremely airy rooms situated in Grezzana cellar, and laid down in a single layer in boxes for the drying. After a withering of 150 days the grapes are picked from the bunches and pressed; the vinification begins. The initial temperature is very low (4/5°C) then it reach the temperature of 18°C before his interruption.
When the wine reaches 13% alcohol the fermentation is stuck with the technique of cold.
Ageing:
It ages in cherry cask with the capacity of 30 hl for about 12 months and an aging period for 3 months in bottle.
Organoleptic chacteristics:
Very deep violet- red colour. At the nose a lot of scents: classical notes of plum, cherry and raspberries, accompanied by spices, vanilla, hay and cocoa.
In the month is intense, full. The sugar content is not high and it let a lasting taste of raspberry, chocolate and liquorice.
