The name DeAetna, inspired by the title of a Latin pamphlet dated 1550, expresses the sacredness of the enological universe.
Latin booklet dated 1550, expresses the sacredness of the enological universe. Written in the form of a dialogue, the text tells about the ascent on the top of the volcano by a Venetian writer, Pietro Bembo, while returning from his stay in Messina at Costantino Lascaris'. The description and the study of Etna and of its activity attribute to DeAetna classicism and historical mysticism, attesting the Etnean wine as the most intellectual moment of the meeting at table.

Grapes are destemmed and sent to fermentation - maceration for about ten days. During maceration, brief pumping over is carried out.
Aging: After the malolactic fermentation the wine is aged in steel tanks and in oak tonneau and then in bottle.
