VARIETY: Cannonau is the prince of Sardinia’s red grapes, as bold and proud as the people of Sassari to whom this wine is dedicated. PRODUCTION AREA: The Cannonau vine thrives all over Sardinia but it is on the warm, sandy soils of the coast that it has found an exceptionally favourable environment. At Tenute Sella&Mosca, Cannonau is grown in the south-east quadrant and on other small plots that have been identified as particularly suitable for the variety. HARVEST PERIOD: In autumn, once full phenolic ripeness has been reached and is still supported by plenty of acid backbone. WINEMAKING: The grapes are very carefully crushed and destemmed before undergoing low temperature pre-fermentation skin contact to encourage the extraction of colour compounds and aroma precursors. Fermentation on the skins is mainly at a temperature of 25°C, which rises to 28–30°C at the end of the process. APPEARANCE: The initial ruby red gradually shades into warmer, less intense tones as the wine ages.
NOSE: Stylishly elegant, mingling the variety’s restrained signature florality with more assertive Mediterranean fragrances carried on the frequent north-easterly Grecale breezes. Discreet but pleasing wafts of wood-derived aromas from the Slavonian oak casks used for maturation. PALATE: Intense, warm and well-structured. Substantial ripe red berry fruits nicely complemented by tertiary notes of spice from bottle ageing and by well-developed tannins. Lingering retronasal aromatics. ALCOHOL CONTENT: 13,5% vol. ACIDITY LEVEL: 5,6 g./l. MATURATION: Complex, in several distinct stages, including periods in traditional Slavonian oak casks, steel and cement vats, concluding with ageing in bottle. SERVE: At a temperature of 18°C. FOOD MATCHINGS: The perfect partner for Sardinia’s classic meat dishes, especially “porcetto”, roast suckling pig.
