Alghero DOC Torbato
Torbato is a grape variety with very ancient origins that is now grown only by Sella&Mosca. The vineyards are situated in the “Terre Bianche” area, which is named after the chalky soils derived from age-old marine sediment. The nose is complex and well orchestrated, with fruity hints and characteristic varietal notes. The fresh, dry palate has good backbone and no harsh edges, and is dominated by the variety’s typical fruity flavours. It is a natural accompaniment to seafood and is perfect with shellfish in particular.
VARIETY: Torbato is an ancient variety that migrated from its original home in the Aegean to the Iberian coast along the trade routes of the Phoenicians. It was introduced to Sardinia under Spanish rule and today is grown exclusively by Tenute Sella&Mosca.
PRODUCTION AREA: Alghero, Tenute Sella&Mosca, on the soil of the limestone-rich “white lands” formed by prehistoric marine sedimentation, which imbues the Torbato grapes with their unique character.
HARVEST PERIOD: Torbato is a late-ripening variety normally harvested in late September or early October.
WINEMAKING: The physiology of the Torbato berry, with its fibre-rich pulp, requires crushing to be followed by brief low-temperature contact of the must with the solid parts of the fruit. This encourages the natural texture-softening action of the enzymes and extraction of varietal compounds. The clarified must ferments at low temperatures for about 20 days.
APPEARANCE: Straw yellow tinged with gold from brief pre-fermentation skin contact.
NOSE: Fruitiness from slow, controlled fermentation on entry followed by varietal aromatics that lend the olfactory profile intriguing complexity as it unfolds.
PALATE: Dry, fresh, assertive and free of any asperity with the fruit-forward flavour typical of the variety.
ALCOHOL CONTENT: 12,5% vol.
ACIDITY LEVEL: 5,8 g/l. The malic component is substantial.
SERVE: At a temperature of 10-12°C.
FOOD MATCHINGS: A wonderfully natural partner for seafood, reaching unforgettable heights when paired with crustaceans.
