Cannonau di Sardegna DOC
The best-known of Sardinia’s black grape varieties is grown in the south-eastern corner of the Sella&Mosca estate, exposed to the north-easterly winds. Its nose is characterised by strong notes of violets, while the palate is full, dry and beefy. Good with roast and braised red meats, game, and strong-flavoured cheeses.
VARIETY: Cannonau, known in France as Grenache and in Spain as Alicante.
PRODUCTION AREA: The Cannonau vine thrives both on the warm, sandy soils of the Sardinian coastline and on the harsh, rocky terrain of the island‘s mountainous interior. At Sella&Mosca, Cannonau is grown in the southeastern part of the estate, where it is exposed to the Grecale winds.
HARVEST PERIOD: Late September and early October.
WINEMAKING: After destemming and crushing, the grapes undergo pre-fermentation skin contact at a controlled temperature of no more than 28°C to preserve the variety‘s characteristic fruit-like sensations and to extract the phenolics necessary for brief maturation in pre-used mediumsized and large oak barrels.
APPEARANCE: Garnet shading into brick red.
NOSE: Red fruits with a distinct bouquet of violets veined with subtle hints of oak.
PALATE: Full-bodied, robust, dry and austere.
ALCOHOL CONTENT: 13% vol.
ACIDITY LEVEL: 5,6 g/l. AGEING: Briefly in once-used medium-sized and large oak barrels.
SERVE: At a temperature of 18-20°C.
FOOD MATCHINGS: Roast or stewed red meats, game and strong cheeses.
