Grapes: Chardonnay, Pinot Grigio, Sauvignon Blanc, Gewürztraminer
Origin: This wine, full of character, comes from selected individual vineyards stocked with vines grafted to slowgrowing rootstock and trained on wire trellises (Guyot) or on the pergola. The grapes of this cuvée grow under the best conditions on the valley floor around the village of Cortina s.s.d.v.. The favourable location of the vineyards, the ideal amount of sun, and the fine ventilation of the vines assure the ripening of grapes of exceptional quality.
Yield per hectare: 55 hl.
Vinification: The grapes are crushed and the stems are removed in a pneumatic tank press. Before being pressed, an 8 hour long cold maceration takes place in order to enhance the fruitiness of the wine. Afterwards, the grapes are gently pressed and clarified through the natural settling of sediments. 2/3 of the alcoholic fermentation is carried out in stainless steel tanks with select strains of yeast. 1/3 of the fermentation is carried out in small casks of French oak which, as a result of the 6 months of aging and the ripeness of the yeast, grants this special wine an increased level of complexity and refinement. After the bottles with their modern design are filled, an extended period of aging takes place before this unique white wine is put on the market.
Characteristic properties: A medium hue with a very rich bouquet that creates the impression of having found a wine of conspicuous harmony. A wine that after several years of cellaring becomes even more enjoyable.
Color: straw-yellow to golden yellow
Bouquet: a strong bouquet of ripe fruit with a variety of aromas (apricots, tropical fruit, vanilla)
Flavor: strong, balanced, and savoury, an interesting play of acidity in the mouth, harmoniously juicy and rich with a pleasant fullness
Recommended pairings: Appetizers, fish and vegetable-based main dishes, white meats
Serving temperature: 12 - 14° C (54 - 57° F)
Cellaring: 3 - 5 years
