This Cabernet is a jewel among the great wines of South Tyrol. Colterenzio's knowledge in processing and aging has allowed to obtain a wonderful red wine, intense, structured and rich. Dark red reflections are accompanied by a bouquet with tones of blackcurrant, bitter chocolate, marzipan and vanilla. A great classic of international stature.
Description: In the processes of vinification and aging it acquires a deep dark purple color. In the mouth you can still feel the full tannins and the extraordinary persistence. Great aging potential: 10-15 years.
Food pairing: It goes well with red meat, grilled or roasted, but especially with game and spicy cheese.
Serving temperature: 16° C.
Cabernet Sauvignon: Grape variety
Area: The vineyards are located at an altitude of 430 m above sea level with excellent sun exposure. It is a rather dry area with sandy and gravelly soils of morainic origin.
Vinification: Fermentation on the skins for 10 days with careful remixing of the cap and a subsequent maceration of 10-14 days. The young wine is then moved into new and used oak barrels. This is followed by malolactic fermentation and aging for 18 months. Careful filtration before bottling.
