Vineyards:
marly-calcareous soils, facing South, South-West; altitude between 200 and 300 m a.s.l.; thickness
plant 5000 plants / Ha; mainly Merlot varieties (clones 180 and 181) and to a lesser extent
Cabernet Sauvignon (clones 337 and 338); rootstock 41 B and Fercal chosen for their high
resistance to active limestone; training system espalier pruned with spurred cordon
bass; production per plant 4 Kg; manual harvest in boxes of 15-18 kg
Vinification:
traditional de-stemming of the grapes, fermentation at controlled temperature (26-28 ° C) in
stainless steel tanks, 4-day maceration with 2 pumping over / punching down per day, malolactic fermentation in stainless steel, maturation in stainless steel and large barrel for 6 months,
bottling, then resting in glass for about 1-3 months.
