Vintage 2004 Grapes 75% Cabernet Sauvignon, Cabernet Franc 5%, 20% Sangiovese Climate Following a very rainy autumn and a winter characterized by extreme cold and rain by large and repeated, there was a delay in germination of about 10 -- 15 days compared with the averages. During the flowering-fruit set the rainfall was frequent and rather cool temperatures, the vegetative development was good but maintained the initial delay until the stage of veraison and ripening. The gathering took place with a couple of weeks later than the average of previous years and was characterized by frequent rainfall and fairly consistent. Unlike the 2003 harvest, characterized by high temperatures and a drier climate, the 2004 vintage will be remembered for cool temperatures and rainfall. Winemaking Since the weather conditions, the collection has been delayed a couple of weeks. Compared to 2003 vintage, very hot and dry, the extractability of polyphenolic and aromatic components was more difficult. To get deep, fruity wines was no need for a longer maceration time and frequently delestage, completing the fermentation even in the presence of grape skins and vats filled. The various batches of the three varieties have thus reached maceration time variables, guidelines, were: three weeks for Cabernet Sauvignon, Cabernet Franc for two weeks and four weeks for Sangiovese. The fermentation temperature was increased a couple of degrees per day, starting from 22
