They are of the type called "violet", native to the area. They do not reproduce in the nursery, but are cultivated by taking plants from existing plantations. Cultivation takes place from October, the harvest begins in May. It is an operation that requires a lot of care and a lot of work: just think that to collect a small box of these artichokes, it is necessary to work on fields covering several hectares. The candino artichoke is the last to be harvested, in the month of May. Processing takes place within eight hours of being fresh.
It is very tender, it is just defoliated and turned manually with a small knife. Immediately after it is placed in extra virgin olive oil. They are like cherries: one leads to another. They are a prized product, few quantities are produced every year, and are usually almost all reserved for their delicacy. Delicate, tender and tasty, they are excellent as an appetizer or to dress rice and pasta salads. Room for imagination!
