- Ancient grains, abandoned in the last decades, are getting back to the center of the alimentary and productive habits of an increasing number of people.
Among the most popular ones there is Tumminia or Timilia, a variety having a lower yield, which thanks to this characteristic grows in harmony with the soil enriching it and not impoverishing it as it happens with intensive farming of varieties having a higher yield.
The benefits of this pasta are not limited to production, but they mainly concern the nutritional side.
First of all, the great digestibility given by the low presence of water in its flours, with a low gluten index, makes it suitable also for those who have light intolerances to gluten, and its particularly toasted taste with notes reminiscent of malt makes it appetizing and suitable for many recipes.
