The wine
The 2016 Yarden Cabernet Sauvignon features aromas of ripe black and red fruit, along with hints of tobacco, earth, and hints of herbs, all set against a French oak background. This classic Cabernet shows full body, concentrated flavor and a sustained finish.

While pleasant to drink at release, the 2016 Yarden Cabernet Sauvignon will improve with bottle aging and should remain in excellent drinking condition for a decade or more from harvest. Try the wine with balsamic-glazed filet mignon, Moroccan lamb tagine, or creamy polenta with simmered mushrooms.

The vintage
2016 was a remarkable vintage. After a routine winter, February recorded average daily highs of around 4 ° C (7 ° F) above normal, setting the stage for a warm spring. Lighter winter rains, along with normal spring rainfall, resulted in 75% of the mean annual rainfall. A mild summer was not enough to cancel out the shock of the warm spring, resulting in a fast and furious harvest, the shortest in 22 years. The beautiful summer produced wines of exciting quality, proving once again that the vagaries of a particular vintage do not prevent the Golan Heights from producing consistently exceptional wines.

The 2016 Yarden Cabernet Sauvignon is made with fruit harvested from several of our best Cabernet vineyards in the Golan Heights. The wine was aged for 18 months in French oak barrels, of which 40% were new.

The denomination
Galilee (or Galil) is the northernmost denomination and generally considered the best in Israel. The highest quality area within the appellation is the Golan Heights (or simply the Golan), the coldest region in Israel. The vineyards of this volcanic plateau rise from 400 meters (1,300 feet) above sea level to 1,200 meters (3,900 feet) and receive snowfall in the winter. The Golan Heights winery is located in the city of Katzrin in the central Golan.
