Distillation: "charentais" method known as double heating. From the first distillation of the wine, accompanied by the fine lees, an alcoholic liquid called "brouillis" (fractions) is obtained, which has an alcohol content of about 30º and represents 1/3 of the initial volume.
Subsequently, the "brouillis" are distilled, forming "la bonne chauffe" (the good distillation) of which the heart is preserved, with an alcohol content close to 70º.
Tasting Notes: Golden amber with coppery reflections. Very fine nose, notes of oak, undergrowth but also spices, pepper and nutmeg. Submissive aromas of ripe fruit and ginger. The flavors of gingerbread, creamy caramel, hot coffee cake fascinate in the mouth. Refined finish and character at the same time, typical Grande Champagne bouquet.
