This raw, lean ham is hand-sprinkled with a mixture of the best salt and herbs, to which a spice blend is added and left to macerate for about 10 days, turning it repeatedly and sprinkling it with its own liquid. This is followed by light cold smoking, using elm wood from local forests. After aging for months in the farm's deep stone cellar, the ham is ready for consumption. It tastes best when thinly sliced and served on rye bread.
