The Fazari brothers began their career in the food industry in 2014 by running the store located at the Chiavenna sports field, right in the cradle of Bresaola.
Strongly linked to the territory and its tradition, and driven by a strong spirit of entrepreneurship, they decided in 2014 to produce their own 'BRISAOLA' called 'FAZARI'.
A Brisaola full of unmistakable flavors and secretly guarding the ancient recipe of the historic butcher who works at their business.
Brisaola seems to have originated as far back as the 1400s, when “carne salada” was produced in Valchiavenna.
The craftsmanship is ancient and secret: the selected fresh meats are totally processed and massaged by hand, and then best preserved with the addition of spices and herbs from our mountains: salt, pepper, juniper, bay leaves, garlic and lots of passion!
The result is a traditional product with a distinctive natural color, rustic appearance and maintained by the low added additives.
The flavor is soft as is the texture, so that the bresaola is flavorful but never dry.
