DESCRIPTION
In order to fully capture the aromatic richness of the alpine pastures and thus be able to obtain excellent milk and cheese, animals from mid-June are driven to the alpine pastures at more than 2,000 meters above sea level where they remain until mid-September when they are brought back to the valley.
The aromatic richness of the herbs they feed on is then found in the milk of these cows.
The cheese ripens in a bunker at 12 °C with 85 percent humidity, thus developing a colorful flowery rind.
It is characterized by a firm, deep yellow paste, aromas of ripe and dried fruits combined with those of alpine herbs - in short, a whiff of pasture aromas!
