My name is Mauro, with my family I live in Marmentino, a small village at 900 meters in the upper Trompia Valley (BS), where life still follows the slow rhythm of the seasons and nature.
My love for animals and for my territory, made me decide to stay in my beautiful mountain to carry on the great tradition of my family: that of breeding and cheese production.
On my farm we raise about twenty brown cows fed, in the winter period, almost exclusively with fodder produced in the area and, in the period from May to October, instead they graze quietly on fresh grass in the surrounding meadows. That is why The milk they produce is of high quality, subjected to all hygienic controls, but processed respecting the good traditions handed down to me by my father.
In my small dairy I work exclusively with all my milk produced. The processes are raw milk, (therefore without pasteurizing) in order to maintain all the aromas and typicality that characterize us.
The great silence of the mountains that enhances the well-being of my cows, the extreme genuineness of their feed, and the good and traditional dairy practices ensure that the cheeses are of high quality, not standardized but linked to seasonal and feeding variations.
Our products are:
- Formagelle fresh classic and flavored, this is a semi-fat soft cheese that is consumed at a maximum of 60 days,
- Robiole fior di burro, a soft cheese made from freshly milked milk (max 30 gg) ,
- NOSTRANO VALTROMPIA DOP, a semi-fat hard cheese aged for a minimum of 12 months
- Mountain butter.
In addition to the production of cheese, my work also consists in the care of the territory: the regular mowing of the meadows, the periodic cutting of the forest, the cleaning of the watercourses, allow a constant and permanent balance of the territory keeping the landscape almost intact.
